Ingredients
  

  • 4 roasted red peppers (roasted ahead of time or from the jar)
  • ½ cup vegan feta (I use voilife)
  • 1 tbsp extra virgin olive oil
  • ½ tsp garlic powder
  • chili flakes to taste
  • salt and pepper to taste

Instructions
 

  • Add all ingredients into a food processor and blend until smooth.
  • Serve with your choice of bread, crackers, crostini, pita or veggies.

There are a lot of vegan capsicum dips made with cashews and freshly roasted red peppers. Sometimes you simply don't have 30-45 minutes to make a dip. Although this recipe is extremely simple, it is not lacking flavour. This gets gobbled up every time I serve it. It's also gluten free! 
This roasted red pepper dip can also be used as a pasta sauce or a spread on grilled vegan sandwiches. It's extremely versatile and delicious!
