Easy Vegan Broccoli Summer Salad

This vegan broccoli salad is the perfect balance of crisp and creamy and is the perfect side dish for a summer BBQ!

Ingredients
  

  • 2 crowns broccoli
  • ½ large red onion
  • ¼ cup slivered almonds
  • ½ cup craisins
  • 1 cup red seedless grapes

Dressing

  • ¾ cup vegan mayo
  • 1 tbsp white wine vinegar (or apple cider vinegar)
  • 1 tbsp pure maple syrup
  • 1 tsp lemon juice
  • fresh ground black pepper and salt to taste
  • 1 tsp mustard (optional)

Instructions
 

  • Start by chopping the broccoli into bite sized pieces. Remove any broccoli stems. You can keep them for a soup but they aren't for this salad ;)
  • Cut the grapes into halves.
  • Finely chop half of 1 medium sized red onion.
  • Add the broccoli, grapes, red onion, craisins, and slivered almonds into a large bowl.
  • In a jar or small bowl, add the vegan mayo, vinegar, maple syrup, lemon juice, salt and pepper and mix well.
  • Top the salad with the dressing, and give it a good mix.
  • If you have time, let it marinate in the fridge for up to 2 hours. Make sure to give it a quick toss before serving as some of the smaller items can fall to the bottom of the bowl.
  • Serve, and enjoy!
