Air Fryer Vegan Home Fries

These vegan air fryer breakfast potatoes are crispy, tender and packed with flavor, making them the perfect addition to any breakfast. They're gluten-free and loved by both vegans and non-vegans. Enjoy them with a tofu scramble or vegan protein pancakes for a complete meal.

Ingredients
  

  • 2 lbs Yellow or russet potatoes, scrubbed, and cut into ½ inch cubes.
  • 2 tsp Olive or avocado oil
  • Avocado oil spray for the tray or basket
  • 1 tsp Seasoning salt
  • ½ tsp Black pepper
  • 1 tsp Garlic powder

Optional Additional Spices (Highly Recommend!)

  • ½ tsp Turmeric
  • ½ tsp Paprika
  • ½ tsp Cayenne (adjust to your preferred spice level)

Toppings

  • Any fresh herbs, or green onions finely diced

Instructions
 

  • Add all ingredients to a large bowl and mix them together.
  • Lightly mist the air-fryer tray or basket with the spray oil.
  • Add the potatoes to the air fryer basket or tray, spreading them out evenly.
  • Cook for 9 minutes at 390°, then stir the potatoes. Cook another 5 minutes and stir again. Check the potatoes to see if they are tender on the inside and crispy on the outside. If needed, continue cooking for a few more minutes.
  • Add your fresh toppings, and serve immediately!
