Why use Extra Firm Tofu for Scrambled Tofu?

Tofu that is extra firm is the perfect texture to resemble scrambled eggs. Tofu can be broken up into uneven curds with your hands or a potato masher to mimic the appearance of eggs. Although you can use any tofu, silken tofu does not scramble well as it is too soft.

How long does tofu scramble last in the fridge?

I would say tofu scramble stays fresh for around three days in the fridge. However, if you double the recipe for the whole household you can have breakfast for two days, and you’ll get plenty of leftovers. You can also use the Tofu scramble mixture and turn it into a wrap! Can tofu scramble be reheated?

Yes, it can. Feel free to reheat the tofu scramble in a pan or in a microwave oven over medium heat. Be cautious not to overcook it if you’re reheating it on the stovetop. You may also add some oil, water, vegetable stock, or any other liquid you’d like.

Vegan Tofu Scramble

Equipment

  • Frying Pan

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 16-ounce block firm or extra firm tofu
  • 2 tbsp nutritional yeast (heaping tbsp)
  • ½ tsp salt (or to taste)
  • couple dashes of turmeric
  • 2-4 cloves minced garlic (or ½ teaspoon garlic powder)
  • 2 tbsp plant based milk (unsweetened and unflavored)
  • chopped herbs and veggies of choice

Instructions

  • Crumble or mash the block of tofu in a bowl. Heat the olive oil in a pan over medium heat. Add veggies and garlic.
  • Cook, stirring frequently, for 3-4 minutes. Add the tofu crumble and mix it up. Now add the nutritional yeast, salt, and turmeric.
  • If you want to add any other spices get creative! Paprika or everything bagel spice are two of my favorites.
  • Pour the non-dairy milk into the pan, and stir to mix. Add fresh herbs and spinach if desired.
  • Cook another 3-4 minutes.
  • Add vegan cheese if desired and fold it in.

      So happy you loved the recipe and its great to make this into a wrap I have done the same! You can also add some potatoes and vegan sausage into the wrap to take it to the next level! I will release a recipe for a vegan breakfast wrap soon!
