These highly requested buffalo chickpea wraps are nutritious, and delicious with just the right amount of kick! They only take 5 minutes to make and are the perfect easy vegan lunch. Although these are easy to make they are certainly not lacking flavor. This is my new favorite lunch on days when I don’t have time to cook!
*Tip for busy days or weeks:
Prepare the chickpea mash ahead of time and store it in an airtight container. Chop the celery and onion and store them in a separate container. If you want to have this meal multiple days in a row just double or triple the recipe!
Ingredients for the Chickpea Buffalo Wrap Vegan
The star of the show in my opinion! Buffalo sauce adds such a delicious flavor to these vegan wraps without being overly spicy. Not all buffalo sauces are vegan as some contain milk products or butter. Check the label to make sure you’ve selected a vegan buffalo sauce. Frank’s buffalo sauce is my absolute favorite!
Another ingredient adds a delicious flavor and adds some creaminess to this chickpea wrap. Use your favorite ranch, or make your own ahead of time. I recommend Hellman’s vegan ranch since it tastes like the real deal!
Chickpeas are our energy source in this meal! Their fiber and protein content makes them the perfect thing to keep you full all afternoon. For ease and speed, we are using canned chickpeas for this recipe. Thoroughly rinse and drain the chickpeas before combining them with the other ingredients.
Celery adds an earthy flavor and a beautiful crunch to this vegan lunch. If you don’t like celery, use a grated carrot instead!
Red onions have a mildly sweet flavor and a nice little crunch. If you don’t have red onion, green onion is a great substitution in this recipe.
Butter lettuce is my favorite choice for this wrap. Romaine, spring mix or iceberg lettuce would work wonderfully as substitutions.
Tortilla used in the Chickpea Buffalo Wrap Vegan
A 12-inch flour tortilla is a perfect choice for this recipe. Spinach, tomato, or whole grain wrap are delicious as well. If you want to make this wrap gluten-free, simply use rice or a gluten-free tortilla.
Easy Chickpea Buffalo Wrap Vegan
- 1 can rinsed and drained chickpeas
- 2 tbsp buffalo sauce
- 1 tbsp ranch, vegan
- 1 large leaf of lettuce (or 3 small)
- 1 rib celery, diced
- 2 tbsp red onion, finely diced
- 1/2 cup feta cheese, vegan
- 2 tortillas (12 inch)
- Add the rinsed and drained chickpeas, buffalo sauce and ranch into a medium mixing bowl.
- Mash with a fork or masher until you reach your desired consistency. Leaving a few chickpeas whole or halved will add texture.
- Stir in the red onion and celery.
- Add half of this chickpea mixture to each tortilla, top with lettuce and feta, and wrap it closed. Serve and enjoy!
