Tip: Once bananas turn brown, peel them and place them in an airtight container in the freezer.  Whenever you need ripe bananas for a recipe, just thaw them and they are ready to use! 

Oats

Use quick oats or rolled oats for this recipe. Oats should be gluten-free, which makes this oatmeal bake recipe gluten-free! Always double-check that the oats are made in a gluten-free facility if gluten is a concern.

Ingredients

  • 2 cups plant milk
  • 2 cups rolled oats
  • 1/3 cup all natural peanut butter
  • 1/4 cup pure maple syrup
  • 3 tbsp ground flax seeds
  • 3 tbsp hemp hearts (optional)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt (only use if your PB is unsalted)
  • pinch of nutmeg
  • 1 tsp pure vanilla extract
  • 1/2 cup vegan chocolate chunks

Instructions

  • Preheat oven to 350°.
  • Add all ingredients except the chocolate chunks into a 6×9 baking dish. Stir well to combine, then fold in chocolate chunks.
