Air fryer breakfast potatoes are the perfect addition to any vegan breakfast! These Air Fryer Vegan Home Fries are tender, crispy, and loaded with spice and flavour.

This is the best at-home breakfast side dish for vegans and non-vegans alike. They’re such a great gluten-free vegan option. I made these for my dad on the last day he was visiting and they were immediately devoured. He said he was disappointed he only got them once during that visit, so you know this recipe is good enough to make over and over again!

  • If you want to add peppers into your home fries, add them to the mixing bowl after removing the potatoes. Mix them around to coat them in any remaining oil and spices. Add the peppers into the air fryer when there are about 5-7 minutes remaining.
  • ¼ cup of chopped white onion can be added and cooked with the potatoes for some extra flavour.
  • Any home-style breakfast potato leftovers can be quickly reheated in the air fryer in about 5 minutes.
  • The cook time may differ depending on the air fryer you have. Always check the potatoes to see that they are tender on the inside and crispy on the outside.

Equipment

  • Air fryer

Ingredients

  • 2 lbs Yellow or russet potatoes, scrubbed, and cut into ½ inch cubes.
  • 2 tsp Olive or avocado oil
  • Avocado oil spray for the tray or basket
  • 1 tsp Seasoning salt
  • 1/2 tsp Black pepper
  • 1 tsp Garlic powder

Optional Additional Spices (Highly Recommend!)

  • 1/2 tsp Turmeric
  • 1/2 tsp Paprika
  • 1/2 tsp Cayenne (adjust to your preferred spice level)

Toppings

  • Any fresh herbs, or green onions finely diced

Instructions

  • Add all ingredients to a large bowl and mix them together.
  • Lightly mist the air-fryer tray or basket with the spray oil.
  • Add the potatoes to the air fryer basket or tray, spreading them out evenly.
  • Cook for 9 minutes at 390°, then stir the potatoes. Cook another 5 minutes and stir again. Check the potatoes to see if they are tender on the inside and crispy on the outside. If needed, continue cooking for a few more minutes.
  • Add your fresh toppings, and serve immediately!
